Abstract

含高效能甜味剂之烘烤食品,本发明大体上系关于包含无热量或低热量之高效能甜味剂的烘烤食品以及其制造和使用方法。尤其是,本发明关于包含至少一种无热量或低热量之天然及/或合成之高效能甜味剂和至少一种改良甜味之组成物的不同烘烤食品。本发明亦关于可藉由赋予更像糖之味道或特征而改良无热量或低热量天然及/或合成高效能甜味剂之味道的烘烤食品及方法。尤其是,该烘烤食品及方法提供更像糖之时间变化形廓(temporal profile)(包括:甜味之起始和甜味之持续)及/或更像糖之风味变化形廓(flavor profile)。
Baked goods comprising high-potency sweetener. The present invention relates generally to baked goods comprising non-caloric or low-caloric high-potency sweeteners and methods for making and using them. In particular, the present invention relates to different baked goods comprising at least one non-caloric or low-caloric natural and/or synthetic high potency sweetener and at least one sweet taste improving composition. The present invention also relates to baked goods and methods that can improve the tastes of non-caloric or low-caloric natural and/or synthetic high-potency sweeteners by imparting a more sugar-like taste or characteristic. In particular, the baked goods and methods provide a more sugar-like temporal profile, including sweetness onset and sweetness linger, and/or a more sugar-like flavor profile.
